Hi Corey! As you've said, whether out of respect, deference, or just not wanting to escalate the trading of wits with a Maia for fear of being completely eviscerated, the hobbits typically don't give sauce when exchanging hobbitry with Gandalf. But I did notice this passage during a reread of the passage where Bilbo was admonishing Gandalf for adding the flash of light during Bilbo's vanishing act and spoiling his joke. "You are an interfering old busybody," laughed Bilbo, "but I expect you know best, as usual." I reckon Bilbo is the only person in Middle Earth who can be this cheeky with Gandalf!
